Strawberry Peanut Butter Oat Bars
Ingredients:
- 1/4 cup of peanut butter
- 1/4 cup of honey
- 1/4 cup of coconut oil
- 2 cups of rolled oats
- 1/4 cup of pistachios, chopped
- 1/4 cup of raisins
- 1/4 cup of walnuts, chopped
- 1 cup of fresh strawberries, sliced
Directions:
- Preheat oven to 180°C (350°F) and line a 9×9 inch baking pan with parchment paper.
- In a small saucepan over low heat, melt the peanut butter, honey, and coconut oil together, stirring until smooth and well combined.
- In a large bowl, toss the oats, pistachios, raisins, and walnuts together.
- Pour the peanut butter mixture over the oat mixture and stir well to coat everything evenly.
- Transfer the mixture to the prepared pan and press firmly into an even layer.
- Arrange the strawberry slices on top of the oat layer, slightly overlapping them.
- Bake for 25 to 30 minutes or until golden and bubbly.
- Let the bars cool completely in the pan before cutting into squares.

Beef and Bean Shepherd’s Pie
Ingredients:
- 2 cans of whole potatoes, drained and mashed
- 1/4 cup of milk
- 2 tablespoons of butter
- Salt and pepper, to taste
- 1 can of beef, drained and shredded
- 1/4 cup of water
- 1 can of sliced carrots, drained
- 1 can of red kidney beans, rinsed and drained
- 1/4 cup of cheese
Directions:
- Preheat oven to 375°F and lightly grease a 9×13 inch baking dish.
- In a large bowl, combine the mashed potatoes, milk, butter, salt, and pepper. Set aside.
- In a small saucepan over medium heat, bring the beef and water to a boil. Reduce the heat and simmer until slightly thickened, about 10 minutes.
- Spread the beef mixture evenly over the bottom of the prepared baking dish.
- Sprinkle the carrots and beans over the beef layer.
- Spoon the potato mixture over the top and spread gently to cover the filling. Spread cheese over the top.
- Bake for 25 to 30 minutes or until golden and bubbly.
