Strawberry-Cherry Pork Loin Roast with Fruit Sauce
Ingredients:
- 1 boneless pork loin roast (about 4 pounds)
- Salt and pepper to taste
- 2 tablespoons of vegetable oil
- 1/4 cup of honey
- 2 tablespoons of Dijon mustard
- 1/4 teaspoon of ground cinnamon
- 1/4 teaspoon of ground nutmeg
- 1/4 teaspoon of ground cloves
- 1 cup of unsweetened applesauce
- 1/4 cup of water
- 2 cups of fresh or frozen strawberries, sliced
- 2 cups of fresh or frozen cherries, pitted and halved
- 1/4 cup of sugar
- 2 tablespoons of cornstarch
- 2 tablespoons of lemon juice
- 1/4 cup of blueberries
- 1/4 cup of sliced peaches
- 1/4 cup of chopped apricots
- 1/4 cup of drained mixed fruit
Directions:
- Preheat oven to 350°F. Sprinkle roast with salt and pepper. In a large skillet, heat oil over medium-high heat and brown roast on all sides, about 15 minutes. Transfer to a baking dish and set aside.
- In a small bowl, whisk together honey, mustard, cinnamon, nutmeg, and cloves. Brush half of the mixture over the roast. Bake for 1 hour, basting occasionally with the remaining honey mixture.
- In a small saucepan, combine applesauce and water and bring to a boil over medium-high heat. Reduce heat and simmer until slightly thickened, about 10 minutes.
- In another small saucepan, combine strawberries, cherries, sugar, cornstarch, and lemon juice and bring to a boil over medium-high heat, stirring constantly. Reduce heat and simmer until sauce is thick and glossy, about 15 minutes.
- In a small bowl, toss together blueberries, peaches, apricots, and mixed fruit.
- Remove roast from oven and let it rest for 10 minutes before slicing. Serve with applesauce and strawberry-cherry sauce on the side. Sprinkle fruit mixture over each slice if desired.
Peanut Butter Rice Krispy Apricot Bars
Ingredients:
- 1/4 cup of butter
- 1/2 cup of peanut butter (divided)
- 1/4 cup of honey
- 6 cups of rice krispy cereal
- 1/2 cup of raisins
- 15 oz of canned apricots, drained and chopped
Directions:
- In a small saucepan over low heat, melt the butter and 1/4 cup of peanut butter together, stirring occasionally.
- Add the honey and stir until well combined.
- Remove from heat and set aside.
- In a large bowl, toss the rice krispy cereal and raisins together.
- Pour the peanut butter mixture over the cereal mixture and stir until well coated.
- Press the mixture evenly into a greased 9×13 inch baking pan.
- In a microwave-safe bowl, heat the remaining 1/4 cup of peanut butter for about 30 seconds or until melted.
- Drizzle the melted peanut butter over the top of the bars.
- Sprinkle the chopped apricots over the top and press lightly to adhere.
- Let the bars cool completely before cutting into squares.
