Cheesy Beef and Bean Casserole
Ingredients:
- 1 can of beef stew
- 1 can of pinto beans, drained and rinsed
- 1 can of kernel corn, drained
- 1 cup of cheddar cheese, shredded (or chopped into small chunks)
- 1/2 cup of cream of chicken soup
- 1 cup of rice, cooked
- 1 cup of apple sauce (for a slightly sweet contrast)
- 1/2 cup of green beans, chopped (you can use canned or fresh)
- 1 tablespoon of peanut butter (optional, for a subtle nutty flavor)
- 1/2 cup of cereal oat circles (for a crunchy topping)
Directions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare Rice: Cook 1 cup of rice according to the package instructions and set aside.
- Mix Ingredients: In a large bowl, combine the beef stew, pinto beans, corn, green beans, and cooked rice. Stir in the cream of chicken soup until everything is well mixed.
- Add Cheese: Fold in the cheddar cheese, reserving a small amount for the topping.
